These are delicious. They got the most raves at work!
Mocha Truffles
Taste of Home 2008
2 packages (12 oz each) semi sweet chocolate chips
1 package (8 oz) cream cheese, softened
3 tbsp instant coffee granules
2 tsp water
1 pound dark chocolate candy coating
white candy coating, optional
-In a microwave, melt chocolate chips; stir until smooth. Add cream cheese, coffee and water. Chill until firm enough to shape. Shape into 1" balls and place on wax paper lined cookie sheet. Chill for 1-2 hours or until firm. (Do not chill more than 1-2 hours. I made the mistake last year of chilling overnight and it completely ruined the mixture.)
-In a microwave, melt chocolate coating, stir until smooth. Dip balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Melt white chocolate coating and drizzle over truffles, if desires. (I use a fork to drizzle things like this- the tines spread the chocolate really nicely.)
Yield: about 5-1/2 dozen.
