Starting the New Year off with a Bang!

Awhile back I was contacted by the awesome people at CSN Stores about doing a giveaway here on the ol' blog. I decided to hang onto the opportunity until the New Year.. I figured that we would all need a little pick me up on the first day back at work after all of the holidays.


CSN Stores has SO many different types of stores (dining room furniture!, modern lighting!, fire pits!)... seriously, I've spent hours looking through the various stores. BUT the store I fell in LOVE with was AllModern.com. L.O.V.E. Everything is exactly my style.

Sausage Balls
Ingredients
1 (1-pound) package ground sausage
3 cups baking mix (recommended: Bisquick)
4 cups grated sharp Cheddar
1/8 tablespoon pepper
Dip:
1 cup mayonnaise
1 tablespoon mustard
Directions
Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray. Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls. Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking. To make the dip, combine the mayonnaise and mustard. Serve with sausage balls.

Pinwheels recipe:
1 cup chopped green onions, 1 pkg dried beef, 6 tbs black olives. Throw that all in a food processor, and then mix with 8 oz cream cheese and 1 cup of cheddar cheese.
Spread thinly onto tortillas, and roll up! Cut into 1/2 inch slices and devour.

Spinach Dip:

1 brick cream cheese
1 12 oz container of sour cream
1 bag shredded mozzarella cheese
2 cups shredded Parmesan cheese
1 box frozen spinach
1/2 cup diced green onions
Dash pepper to taste

soften cream cheese, mix with sour cream and add mozz cheese. Microwave until melted. Add parm cheese, microwave until melted again. Mix in spinach (after thawed, rinsed and drained) and green onions. Mix well and microwave until melted. Pepper to taste.

You can also throw it all into a small crockpot on low for a couple hours if people will be grazing, that way you don't need to keep heating it up. It's delicious! I promise.

Those measurements are approximate and all to how you want to make it. You can add as much or as little of everything depending on what you like.

Buffalo Chicken Dip
2-10 ounce cans chunk chicken, drained (I boil 3-4 raw chicken breast with Lawry's Seasoning Salt, then shred myself)
2-8 ounce packages cream cheese, softened (I use fat-free)
1 cup Ranch dressing
3/4 cup hot sauce (I use Texas Pete's and we like it hot, so I add the whole bottle!)
1 1/2 cups shredded Cheddar cheese

Directions
1.If you're using fresh or frozen chicken breast:
Bring water, chicken, and Lawry's Seasoning Salt to boil. Continue boil for 20 minutes or until chicken is cooked thoroughly. Let chicken cool. Shred into bite-sized pieces.

2. Blend softened cream cheese, ranch, and hot sauce until combined and creamy.

3. Stir in shredded chicken.

4. Bake at 350* for 15 minutes.
Sprinkle with shredded cheese and cook 15 additional 15 minutes.

Serve with celery, carrots, and Fritos.

3Tbs unswetened cocoa powder
2 cups sugar
1/2 cup milk
1/2 cup butter
3 cups quick cooking oats
1/2 cup peanut butter
1Tbs vanilla

1. Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better). When they reach the boiling point, boil them for no longer than 90-120seconds

2. Stir together oats, peanut butter and vanilla with a spoon. Pour the hot mix over the oatmeal mix and drop on wax paper.

Ingredients
1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar
2 tablespoons chili powder
Directions
Preheat oven to 350 degrees F.

Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

Cocktail Wieners

1 package (1 lb) cocktail wieners or 1 lb hot dogs, sliced diagonally into bite-sized pieces
1 jar (6 ozs) prepared mustard
1 jar (10 ozs) red currant jelly

Combine mustard and jelly in saucepan. Add cocktail wieners or hot dog slices. Simmer over low heat for about 30 minutes or until heated through.

If you prefer, you can use a crock pot to prepare this dish. Simply set on low heat, and the wieners can simmer for hours.

Hot Spicy Chicken Wings

Ingredients -

Vegetable Oil, for deep frying
4 pounds Chicken Wings, separated at the joints, wing tips reserved for another use
1/2 cup Chili Sauce
1/4 cup Louisiana Style Hot Sauce
8 ounces Butter, melted
juice of half a Lemon
1 tablespoon Tabasco Sauce

Preparation:


1. Preheat oil in deep fryer to 350 F.

2. Deep fry chicken wings in small batches, 7 to 9 minutes, until golden brown.

3. Drain on plate covered with paper towels.

4. Combine hot sauce, chili sauce, melted butter, lemon juice, and tabasco. Mix well.

5. Pour over hot wings. Toss to coat evenly.

Pizza Dip recipe:

1 pkg. (8 oz.) Cream Cheese, softened
1 cup KRAFT Grated Parmesan Cheese, divided
1/2 cup pizza sauce
1/2 cup shredded Mozzarella Cheese 2 Tbsp. chopped green peppers
2 Tbsp. chopped red peppers

HEAT oven to 350ºF.

BEAT cream cheese and 1/2 cup Parmesan with mixer until well blended.

SPREAD onto bottom of 9-inch pie plate. Top with pizza sauce, mozzarella, remaining Parmesan cheese and peppers.

BAKE 20 min. or until heated through. Serve with assorted Crackers or breadsticks.

Forgot to mention my fav apps! CHEESE! Anything cheese. And to that, here is my recipe for baked brie:
Preheat oven to 400 degress
Set brie cheese on top of puff pastry rolled out
Spread Raspberry jam (or jam of your choice, I like to mix Raspberry and Jalapeno jam)
Wrap the puff pastry around the jam covered brie
Brush puff pastry outside with whipped egg
Bake for 25 minutes

Smoky Black Bean Dip

Smoky Black Bean Dip
Serves 4, but can be easily doubled.

1 15-oz can of drained, rinsed black beans
4 large garlic cloves, minced to a paste with a dash of salt
1/4-1/2 tsp ground chipotle pepper (adjust to taste for heat)*
1 tbs fresh lime juice
1 tbs white vinegar or white wine vinegar
1/4 tsp ground cumin
2 tsp ground chili powder
2 tbs soy cream cheese (I used regular light cream cheese)

Baked corn chips for dipping

Add all ingredients to a food processor and blend until smooth.

Fill a glass bowl with dip, cover, and microwave until hot, about 3-5 minutes. Serve with generous amount of baked corn chips.

Take all ingredients and put them out on one platter...put as much or as little as you like of each.

Marinated artichokes
Hard salami
White garlic cheese
Sharp Cheddar cheese
Olives- we like the ones with garlic/jalapenos inside
Craisins
Cashews- Place a handful in a plastic bag and add as much hot sauce as you can stand.
Toasted Baguette/Italian bread toasted
Whole grain mustard

Then eat it all together. I know that the list is kinda weird...but I promise you -- this is so good. The craisins help off set the spiciness of the hot sauce and the cheese and mustard combination is so delightful. I hope that you enjoy this dish. I took it with us to game night -- there was hardly anything left on my platter! This is really good with a glass of wine or a beer. We had a white wine with it at home, and a beer sampler with it at Square One.

Salmon Bites:

Toast (cut into small squares) or crackers, put on your choice cream cheese, thin slices of raw salmon/shrimp/crab and top off with a herb also of your choice, I usually go with rosemary with the salmon!

Hummus recipe!

* 2 cups canned garbanzo beans, drained
* 1/3 cup tahini
* 1/4 cup lemon juice
* 1 teaspoon salt
* 2 cloves garlic, halved
* 1 tablespoon olive oil
* 1 pinch paprika
* 1 teaspoon minced fresh parsley

Directions

1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.

1 eggplant, cut into 1/2-inch slices
2 tablespoons olive oil
2 cloves garlic, peeled and thinly sliced
1 (15 ounce) can garbanzo beans, drained
1/2 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
2. Place the eggplant slices on the prepared baking sheet, and brush them generously with olive oil. Place garlic slices on top of the eggplant.
3. Bake the eggplant in the preheated oven until soft and golden brown, 15 to 20 minutes.
4. Place the roasted eggplant slices and garlic into the work bowl of a food processor with the garbanzo beans and salt, and process until smooth.

Recipe copied from a blog! It's not mine....but it is delicious. :)

Ingredients:
1 12-oz can chick peas
1-2 large cloves garlic
2 Tbsp extra virgin olive oil
2 tsp+ tahini (sesame paste)
juice of 1 lemon
1/4 tsp salt

Directions:
-Drain water from the can of chick peas into a small bowl and reserve.
-In a food processor mix together the chick peas with the remaining rest of the ingredients, being careful to add second half of lemon juice and tahini slowly, stopping to taste.
-Slowly add some of the reserved liquid from beans and a bit of water for correct consistency,(about 1-2 minutes) until a smooth, slightly fluid paste is formed.
-Refrigerate for at least 30 mins before serving

Ingredients
12 pita bread pockets 1/2 cup olive oil 1/2 teaspoon ground black pepper 1 teaspoon garlic salt 1/2 teaspoon dried basil 1 teaspoon dried chervil

Directions
Preheat oven to 400 degrees F (200 degrees C).
Cut each pita bread into 8 triangles. Place triangles on lined cookie sheet.
In a small bowl, combine the oil, pepper, salt, basil and chervil. Brush each triangle with oil mixture.
Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily!

And there are lots of great recepies for baked brie, but here's one I like!

INGREDIENTS
1 large sheet of puff pastry dough or 1 tube of refrigerated crescent dinner rolls
1 round or wedge of Brie cheese (do not remove rind)
Raspberry Jam, or other sweet jam
Brown sugar
1/4 cup of maple syrup
METHOD
1 Preheat oven to 350 degrees F.
2 On a stick-free cookie sheet, lay out the puff pastry or the crescent rolls flat; put brie round or wedge on top.
2 Spread jam on brie, fold dough over top, cutting off excess dough. Drizzle maple syrup and place a handful of brown sugar on top.
3 Bake at 350º for 25-30 minutes, pastry should be golden brown. Let cool for 10 minutes before serving.

My recipe:
Delicious avocado
Ingredients
1 ripe avocado
* 2 cloves garlic
* Lemon juice
* 1-2 pc soft cheese
* Salt
* A few drops of olive oil
* Nutmeg
* Baked bread (like toast without oil, just dry)

Directions
MMix all ingredients together, stir well and get avocado spreads, then lay it on bread and eat with fresh vegetables

Bonus II - Veggie Pizza Recipe:
2 crescent rolls
12 oz cream cheese
1 pkg dry ranch dressing mix
6 oz sour cream (or mayo)
2 c chopped and cleaned broccoli
1 c shredded carrots
other veggies you choose (peppers, onions, tomatoes, cucs, etc)
2 c shredded cheese (optional)

1. Lay out crescent rolls on a cookie sheet, bake according to instructions. Let cool.
2. Combine cream cheese, sour cream and ranch dressing mix. Spread evenly over cooled crescent rolls.
3. Top with assorted veggies (and sprinkle shredded cheese on top if desired!). Cut into bit size squares and serve on an adorable platter like the one I'm trying to win by posting this recipe! YUM!
