Menu Plan Monday

There is not really a menu plan this week. I will be the only one eating supper at home, so I stocked up on veggies at the farmer's market.

I have:
Beets/Beet greens (enough for 2 or so meals)
Baby Zucchini
Fixins for chef salad
Imitation crab meat
Fresh mozzarella
Fresh basil

..and I am about to have fresh peas from the garden.

I am thinking that tonight I may have grilled kabobs with the zucchini, onions, shrimp, mushrooms and a little salad. Probably beets too.

Tomorrow- chef salad?

At some point I'll have a caprese salad.

...It's going to be a good week :)
