Menu Plan "Monday"



Whoops.. missed Monday. Oh well. This week is prep week for the Frederick half marathon on Sunday!

Monday
(rest)

Bubble up enchiladas
Spinach sautéed with garlic

Tuesday
(1 hour x-training/step aerobics class)

Tacos/taco salad

Wednesday
(30 minute bike ride, 4 mile run)

Leftover bubble up enchiladas

Thursday
(2.5 mile speed work run, 20 minute bike ride, 1 hour x-training/step aerobics class)

I get home late so.. grilled cheese maybe? Or maybe eggs?

Friday
(45 minute bike ride)


Lunches/Snacks
Mason jar salad with lettuce, barley, cheddar, hard-boiled egg, grape tomatoes, ranch
Hard-boiled egg
Banana
Carrots
Applesauce
